Crescent City Sweets -- Cafe Du Monde Beignets!

Operations Manager Neil Golub and I are in New Orleans gearing up for our special broadcast from Emeril's restaurant on Thursday from 11 am to 1 pm ET, celebrating the restuarant's 20th anniversary. In our downtime, we're eating...a lot! Our first stop in the morning was Cafe Du Monde, a New Orleans institution for nearly 150 years that serves just two things: cafe au lait and beignets.
Take a look at how they create their famous treats, and maybe you'll get inspired to make a batch of your own using Chef Emeril's simple recipe.
1 At Cafe Du Monde, there are is only one food on the menu: beignets.
2 Almost all of the seats are outdoors, and the cafe is open 24/7.
3 The place has been in New Orleans' French Market serving beignets and its signature coffee blended with chicory root since 1862.
4 To make the beignets, this machine flattens the yeast dough and stamps out squares.
5 A cook transfers the dough squares to hot oil, which fries them up into puffy golden fritters.
6 Waitresses line up to fill cups of coffee and pick up dishes of beignets on cafeteria trays.
