What a weekend! Living Today's listeners and I cooked and learned together, as part of the Living Today's Weekend Cooking Challenge. This past weekend members of the facebook group made spinach torta, a wonderful recipe provided by James Beard Award-Winning author Laura Schenone.
Here's some of what we learned when making the spinach torta:
1. Make sure the spinach is drained of all its moisture and very dry before proceeding.
2. The cream cheese needs to be very soft so that it blends well with the eggs.
3. It is important to spice your mixture before adding to the spinach; adding enough salt and pepper to your taste.
4. The dish pairs well with tomatoes and looks wonderful plated with tomatoes and parsley.
Here's how the cooking challenge works: Once a month, we'll make the same recipe and post photos, comments, tips, and ideas on our Facebook group! The chef who provides the recipe joins our group that weekend as our guest chef and responds to questions and comments about the recipe. It's like having an expert chef in your own kitchen for the weekend!

8 11 year-old Jeanine made this spinach torta with a side of ham. Dianne helped her whip up the dish.
10 "My late lunch. Yum! I thought that it would be 'eggy,' but it is not. Spinach is definitely the star of the dish. Next time I will probably use fresh spinach," explains Jonnie.
11 "I did a bachelor version: 1/4 the recipe and baked it in a convection toaster over. Great for breakfast all week long," writes Eric.
