Harbingers of spring, thin, or plump, asparagus are in season right now. So, why not put them in a sandwich? I decided to do a riff on a traditional East Indian samosa, a pastry filled with potatoes, usually peas, and if vegetarian, a few other vegetables. Seasonings might include cumin, coriander, garam masala (a blend of sweet and hot spices), and even mint. Here's my take, done in a pita and served with a yogurt-mint sauce. Feel free to swap in another bread for the pita, Lisa Mantineo, producer of Everyday Food, thought it might be delicious on a toasted English muffin.
