Recap of Mario's Weekend Cooking Challenge

This past weekend's cooking challenge was a delicious, tremendous success! Chef Andrew Wild, chef and instructor at the Culinary Institute of America at Greystone provided the recipe for shrimp in a cilantro cream sauce.  This dish is easy, delicious, and doesn't take a long time to prepare.

We even welcomed our youngest sous chef ever -- Ethan.  He helped his mom Becky with this dish by graciously taking a nice long nap while she cooked.  Isn't that quite the gentleman?  He's adorable, talented and just celebrated his first birthday!

We learned to substitute other herbs for the oregano (basil works great).  We also learned to cook with avocado oil and how to adapt a recipe from appetizer to entree by placing a tortilla in the dish and cutting into small bites. Many members of Mario's Weekend Cooking Challenge tell me that they're cooking together as a family and that is so great to hear. I would love for you to join me again in May as we feature a guest chef and their special recipe. We'll learn new techniques and skills in the kitchen together.
