Sandy's Bacon, Pepper Jelly, and Egg Sandwich

Just a few days post-Easter and I'm betting lots of you have leftover hard-cooked eggs. What to do? Well, egg salad and deviled eggs certainly come to mind but let's have something with just a little twist.  So here's today's sandwich -- a little dolled up, and there's no need to wait for Easter and a surfeit of eggs, to try it.

Bacon, Pepper Jelly, and Egg Sandwich

Sandy's Bacon, Pepper Jelly, and Egg Sandwich
Makes 2 sandwiches
2 tablespoons mayonnaise
2 tablespoons spicy red pepper jelly
2 large onion rolls, split
6 slices bacon, cooked and broken into thirds
2 hard-cooked eggs, thinly sliced

Directions:
1. In a small bowl, whisk together mayonnaise and jelly. Spread mixture on both cut sides of rolls. Top one side of each with bacon and egg and close.

Sandwich tip: For perfectly sliced eggs, get a cool, inexpensive egg slicers. This is my favorite egg slicer.
