Let's call it chicken week! With chicken on sale ($.99/lb for name brand!) I got four plus backs for stock. Made a vat of chicken stock with all of the usual suspects minus dill. I wanted to use the chicken and stock for lighter chicken enchiladas, a fave EDF recipe.
Next day, more chicken! Now it was off to Spain for Arroz Con Pollo, a Martha Stewart Living recipe I thought the family would love.
The tomato soup was requested by my daughter. This version is very similar to one that appeared in EDF.

You can't see it but I went crazy with basil. I like it with cream, but you could puree it without any extra fat. It's just as delicious. Photo by: Samantha Kuvin
