Let's call it chicken week! With chicken on sale ($.99/lb for name brand!) I got four plus backs for stock. Made a vat of chicken stock with all of the usual suspects minus dill. I wanted to use the chicken and stock for lighter chicken enchiladas, a fave EDF recipe.
Next day, more chicken! Now it was off to Spain for Arroz Con Pollo, a Martha Stewart Living recipe I thought the family would love.
The tomato soup was requested by my daughter. This version is very similar to one that appeared in EDF.
p.s. no pix of this week's cake made by Samantha and friend--they wanted to work out a few technical difficulties. Standby for more baked goods!
