Making Spatchcocked Chicken was a success!

Mario's Weekend Cooking Challenge was a tasty success! The most recent challenge featured a lesson in making Spatchcocked Chicken. This method of making a moister, faster-cooking chicken comes our way from the May edition of "Everyday Food." We learned that having extra-sharp poultry shears is important since you have to remove the chicken's backbone in order to butterfly it. This recipe cooks at 500 degrees so having a squeaky clean oven really ensures safety since the chicken will reach a very high temperature. This method amazing...the chicken cooks in about thirty-minutes!

i made this the other evening for guests and it was enjoyed by ALL. the chick pea version (FROM EVERY DAY FOOD MAY 2010) was the one i made and they were a hit~even by my picky 4 yr old boy
quick and simple and DELICIOUS!
