Mario's Weekend Cooking Challenge: Spatchcocked Chicken

It's time for  my next Weekend Cooking Challenge! Once a month, we'll select a recipe from a chef and make the recipe during the weekend. Join me tomorrow for our next adventure in the kitchen. Our guest chef is the wonderful Sandy Gluck, host of "Everyday Food" on our radio channel   (live every weekday from 11 a.m. to 12 p.m. ET.

Sandy is going to teach us how to spatchcock a chicken. This technique, also featured in the May Issue of "Everyday Food" magazine, ensures a crisper, juicier chicken and a shorter cooking time. This great recipe also features three different versions. Once you spatchcock the chicken (in effect butterflying and roasting it), you can make it with potatoes, chickpeas, or tomatoes! Take your pick.

We all get cooking tomorrow at 2:00 p.m. (ish) ET. I say "ish" since it's the weekend and you can start any time you wish.
