Our First Annual Grilling Hotline

What a great day!  Today, May 24, is the first annual grilling hotline on Martha Stewart Living radio --  Sirius 112 and XM157. I had the pleasure of speaking with John Stage, owner of Dinosaur Bar-B-Que in NYC, Syracuse, and Rochester, New York and sampling some 'cue. John brought in a glorious pork shoulder, cooked long and slow until it got a deep caramelized crust and melt-in-your-mouth tender meat. Glazed with their own Sensuous Slathering bar-b-que sauce, pulled and served on a soft bun, it was a barbecue lovers dream. John answered questions from what type of grill (he prefers charcoal), to starting a fire--he, like me, favors a chimney starter. Fish on the grill came up a few times and John's advice: well-oiled grates, oiled fish, and no turning until a bottom crust forms. John walked listeners through brisket, chuck roast, chicken, fish, and even a vegetarian dish with some marinades and sauces thrown in. As I said earlier, "What a great day!"
