Today on Feeding Our Future, Bill Telepan welcomed White House Chef and Senior Policy Advisor for Healthy Food Initiatives Sam Kass to discuss the First Lady's Let's Move campaign to combat childhood obesity and explain how our government hopes to change the way the next generation of Americans will eat.

First on Sam's list: Teaching people how to cook, because with just a little bit of culinary skill, every family can make wholesome, delicious food on a budget.  Here he describes a nutritious dinner that can be made for $1.

Next the two chefs talked about school food, from the ways they're making it better to tactics for convincing the kids to actually eat their new-and-improved healthy lunches.  Here Sam and Bill confess to their own childhood love affairs with junk food (honestly, Bill, Pop Tarts?), and emphasize the importance of parents and teachers becoming role models - and authority figures - at the table.

Last but not least, the chefs discussed the importance of, umm, chefs.  Biased as they may be, they have evidence to back it up!  Here Sam highlights the Chefs Move! to Schools  program that's bringing 1,700 chefs into school kitchens across America to enliven the menus and teach cooking skills, and describes personally witnessing Marcus Samuelsson casting a spell over children powerful enough to induce them to hoard cauliflower and chew on raw rhubarb.

The show will replay tonight at 7 pm ET, Saturday at 4 pm ET, and Sunday at 10 am ET, and you can also check out the recap of last week's show to get caught up.  Next Tuesday at 11 am ET/8 am PT, a panel of New York City public school students will be here to tell Bill what they think about healthy eating, and participate in a blind taste test to determine whether they prefer meals made from scratch with fresh ingredients or the processed versions served in most cafeterias.  Stay tuned!
