
Duck Rolled in Swedish Flatbread with Spice-Pickled Apple and Turnip Slaw
When most Americans think of Sweden, they think of two things: Ikea and The Muppet Show's Swedish Chef. Having lived and traveled in Scandinavia over several years, I think of endless summer days, sailing to idyllic picnic spots, eating lots of delicious seasonal meals washed down with cold beer and aquavit, and meeting lots of really good looking people. Seriously, there must be something in the herring over there.
He didn't bring sunshine or sailboats, but Chef Marcus Jernmark is pretty cute and, even more importantly, he came to our studio today bearing samples of the dishes he's making at New York's Aquavit restaurant this fall. If you want to wow guests at your next party - or even Thanksgiving dinner - try making his duck rolls with spice-pickled apple and turnip slaw.
