While sweet and sour might conjure up visions of a deeply red, thick, overly sweet sauce, this one is light and flavorful with the perfect balance between sweet and tangy. With just enough cornstarch to bind without making it too thick, the sauce coats the vegetables and the crisp tofu but isn't overpowering-- a delicious blend of flavors and textures. So, joining the ranks of people shying away from meat on Mondays, here's my meatless Monday dish for today: Sweet and Sour Tofu with Vegetables.
