Every February is Pancake Month at Clinton Street Bakery in New York City. Each day, Monday through Friday, they feature a new and different pancake flavor on their menu. The idea for Pancake Month first came to owners Dee Dee and Neil when they were trying to come up with a way to invite customers and energize their staff and kitchen during an otherwise slow February. During the first year, they printed up postcards with corresponding days and flavors and saw a boost in traffic. During the second and third years, the trend not only caught on but ignited a pancake craze in their small Lower East Side restaurant. While they serve a very decadent array of pancake flavors each year, the most popular remains their fresh coconut pancakes with caramelized pineapple and roasted macadamia nuts.
