How-To Chocolate Truffles

1 Beautiful chocolate
2 Cream into the saucepan
3 Sugar and butter added to the cream
4 Scraping the seeds from the vanilla bean
5 Into the saucepan the vanilla bean goes
6 Monty stirring the mixture together
7 Separating an egg-we just want the yolk
8 Whisk the remaining sugar together with the egg yolk
9 And into the saucepan it goes
10 Everything but the chocolate-the vanilla bean has been taken out; it's done its job
11 Chopped chocolate added to the saucepan
12 The chocolate has melted, now it all gets whisked together
13 Use a spoon to scoop out the chocolate mixture, then roll and shape the truffles
14 Truffle mix in the upper right and corner and Monty rolling truffles
15 Truffles ready for some coating
16 Rolled in nuts
17 In confectioners' sugar

19 Assorted coatings-chopped toasted almonds, toasted coconut, confectioners' sugar, cocoa powder
20 Boxed and ready to go
We've been celebrating chocolate this week on Martha Stewart Living Radio and what better way to end the week than making chocolate truffles. Shavon and Monty are always up for a challenge and today it was making chocolate truffles. There are all kinds of truffles, some easier than others to make. Today we did a super simple truffle-- easy to make but loaded with lots of flavor. The secret, of course, is in the ingredients. Get the best chocolate you can and you're on your way to a deliciously decadent confection. If that doesn't say I love you (yes, Valentine's Day is Monday), well, I don't know what does.
