Whether you call it a soup or a stew, this hearty vegetarian dish made with white hominy is guaranteed to satisfy even the most committed carnivore (at least it did in my house). I'm loving meatless Mondays!
You can find hominy in lots of supermarkets alongside the canned beans. Ancho chile powder provides a smoky flavor and while it's hot, it isn't killer hot. Feel free to add more if you'd like. If you don't have ancho chile powder or smoked paprika, no worries, simply use your favorite chile powder and swap in regular paprika for the smoked.
