Meatless Monday: Vegetarian Split Pea Soup and Quinoa Fritters

1 Split Pea Soup ingredients
2 Add some lettuce to the pot; it lightens the texture
3 Ready to be pureed
4 Soup with fritters on the side
5 Fritter ingredients-forget the cornmeal it wasn't necessary
6 Quinoa fritters-crisp, golden brown, and incredibly delicious
Meatless Mondays have proven to be an exciting challenge for me. Living with two men (husband and son) who believe that no meal is complete without meat means that the food has to convince them that no meat is AOK. Hearty, flavorful food; nothing less is what they've come to expect and I plan on delivering. If you're wondering what the lettuce is doing in the soup, it helps to lighten it up a bit.
Today, we have a Vegetarian Split Pea Soup and Quinoa Fritters-- declared to be beyond good-- hey, I think I might have convinced them. What about you?
