Meatless Monday: Chickpea Pizza with Broccoli Rabe

1 Garbanzo bean or chickpea flour-or besan in Indian markets
2 Chickpea flour, salt, and water combined and resting for 30 minutes to thicken slightly
3 Ingredients for the pizza-from left to right-chickpea flour mixture with rosemary, olive oil, broccoli rabe, and aged gouda cheese
4 Once the chickpea mixture hits the hot pan it starts to cook around the edges
5 Cheese scattered on top
6 All assembled and ready to go into a 500°F oven
7 Baked pizza
Known as socca in France and farinata in Italy, chickpea pizza is just plain good and it's gluten-free! No yeast involved, just a little bit of resting time for the dough to thicken slightly and then a brief time in the oven and you get a pizza with a nutty taste and a crisp crust. You can find chickpea flour in health food and Indian stores alongside the other flours.
So it's another meatless Monday here in my home and this one got a thumbs up too.

Hi Sandy! I had such fun talking all things veggie burgers with you the other day, but I was really inspired to try this chickpea pizza recipe... So I did, and it is fabulous! I topped mine with artichoke hearts, green chiles, and Monterey Jack cheese and it was so addictive that I've thought about it ever since. Guess I'll have to make it again very soon.
