Apple, sweet caramelized onion, and nutty Gruyere cheese make a great topping for your favorite pizza crust. This is your pizza, so if you'd rather top it with Swiss cheese, or Cheddar, I say go for it! While I've made mine with a whole-wheat crust, again make yours just how you like it.
Preheating the oven early in the game gets it good and hot, helping to produce a nice, crisp crust.
Pizza with Caramelized Onions, Apple, and Gruyere Cheese
Serves 4
Ingredients
2 tablespoons extra-virgin olive oil, plus more for the pan and paper
1 pound room-temperature, storebought or homemade pizza dough
2 large onions, halved and thinly sliced crosswise (4 cups)
Coarse salt and ground pepper
1 large sweet apple, quartered, cored and thinly sliced crosswise
1 tablespoon plus 1 teaspoon spicy brown mustard
3/4 teaspoon dried rosemary, crumbled
1 1/2 cups shredded Gruyere or Swiss cheese (6 ounces)
1. Preheat the oven to 500 degrees. Line a large baking sheet with parchment paper, lightly oil the paper. Place the dough on the baking sheet and with your fingers press it out to a rectangle 14 x 10-inches. Cover with a sheet of lightly oiled plastic wrap and let rise for while you prepare the topping.
2. In a large skillet, heat the 2 tablespoons of oil over medium. Add the onions, sprinkle with salt and cook, stirring frequently until starting to brown, about 15 minutes. Stir in the apple, season with salt and pepper, and cook until the apple is crisp-tender, about 5 minutes longer.
3. Gently brush the dough with the mustard. Spread the caramelized onion-apple mixture over the top, leaving a 1/2 -inch border all around. Sprinkle the rosemary over the top. Scatter the cheese on top. Bake on the lowest rack in the oven until the crust is crisp and the cheese has melted and is browned in spots, 12 to 15 minutes.
