John Collins
2 ounces Bols Genever
1/2 ounce fresh lemon juice
1 1/2 teaspoons maraschino liqueur
Gently shake ingredients over ice and strain into a collins glass filled with fresh ice. Top with chilled seltzer.
Roof Garden Cooler
2 ounces dry vermouth
1 ounce fresh lime juice
1/2 teaspoon superfine sugar
1 dash angostura bitters
Gently shake ingredients over ice and strain into a collins glass filled with fresh ice. Top with chilled ginger ale.
Tom Collins
2 ounces gin / Old Tom Gin
1/2 ounce fresh lemon juice
1 teaspoon superfine sugar

Paloma
2 ounces Reposado Tequila
Juice of 1/2 lime
Pinch of coarse salt
Gently shake ingredients over ice and strain into a collins glass with spent lime shell and fresh ice. Top with chilled grapefruit soda.
