Our webmaster challenged me to produce three recipes with cantaloupe. Well it's a pretty strong challenge, but she did ask, so here are the results - sweet, savory, and slurpy. I used a Honeydew Agua Fresca recipe as inspiration for a cantaloupe beverage bearing the same name and texture. I took it to the freezer next, and adapted a Watermelon Pop recipe. I've replaced watermelon with cantaloupe, added a spritz of lemon, and now have a perfect no-bake dessert. For an app or a light lunch, try the classic cantaloupe and prosciutto with the addition of baby arugula, tossed with a dijon sherry vinegar dressing. Oh look, I didn't turn the stove on at all! Now that's perfect cooking for summer. Enjoy!
