Guest host Rozanne Gold returned to "Cooking Today" yesterday where she discussed cooking oils, "Genuis Recipes," and Father's Day dishes. Rozanne kicked off the show by demystifying cooking oils, and Ms. Gold is no stranger to using them. She discussed the common misconception about "expensive" oils, her favorites, and she even mentioned some recipes that you would never expect use olive oil!
Rozanne was quick to point out the qualifications of a good olive oil--freshness and the use of only one or two olives in the mixture. Although cooking with olive oil may seem strange, Rozanne offered a few of her recipes that include olive oil, currently available on her blog.
Along the lines of discussing easy recipes, Rozanne invited Senior Editor of Food52, Kristen Miglore, to speak about her column, "Genius Recipes." With a title like that, you have to wonder what the qualifications for a genius recipe would be! According to Kristen, the recipe has to have that "aha!" factor that really makes it stand out. Don't be fooled by the title of "Genius Recipes"; Kristen says that most of the recipes are quite simple and sometimes only have 3-5 ingredients.
Rozanne wrapped up the hour with "In My Kitchen," where she shared her own advice and recipes from her new book Radically Simple: Brilliant Flavors with Breathtaking Ease. She also shared a great Father's Day recipe that includes grilled steak that can be paired with healthy mashed potatoes!
